this cake looks beautiful. one question before i dive in: how much vanilla did you use? the original recipe calls for 4 teaspoons but in your notes you mention increasing the amount to 1.5. can you clarify? thank you!

Hi Jess: You won't be sorry -- this is a great cake! I used all three spices (1.25 t cinnamon; 3/4 t nutmeg; 3/4 t ginger).

This cake looks so delicious, Kristin. I'd like to make it for my father-in-law's birthday...carrot cake is his absolute favorite. Love your ideas of cutting down on the sugar and oil and subbing pineapple for the raisins. Quick question, though -- I wasn't sure if you were replacing the nutmeg with ground ginger or if both should be used in combination with the cinnamon. Thanks for all the great inspiration!

Any idea if the cake lady still bakes cakes? We live in Minneapolis and I'd love to buy that carrot cake instead of making it. I tried to make a carrot cake in high school and the nightmare of cleaning carrot pieces off of cupboards, the floor and everything else still haunts me.
