So, I know this is an old post, but I just made these tonight (I'm putting on a fancy-pants Spanish-inspired birthday dinner for my hubby tomorrow), and they are AMAZING. I've made tortilla before, because it was so ubiquitous (not to mention delicious) everywhere we went in Spain. This recipe wins! :) Getting that good caramelization on the onion and that fine little dice on the potatoes and the cheeeeese... home run.

Polly: Sounds delicious! I might scale back on the potatoes though, to make room for the bacon. Let us know how it goes!

Kristin - how do you think these would be with the addition of crumbled bacon? Thinking of them for the Christmas breakfast menu. Thanks!

Nice, very cool. I just made them some out of a Donna Hay magazine this morning and was pretty happy. I'm going to make a more traditional version tomorrow. I liked the idea of sour cream and the cheese. Like a Frittata.

Here's my post if you are interested in reading it.

Thanks!
