		<description>I have made beer can chicken many times and if you eat it while carving there is nothing better!  Your problem lies in the rub, or lack thereof.  There are many versions (Thai, cola, etc.) you probably ought to experience the basic first.  Steven Raichlen has a great basic recipe for a rub and you can make dipping sauces also but I don&#039;t think they are necessary.  With his permission;
1/4 c kosher salt
1/4 c dark brown pepper
1/4 c sweet paprika
2 TBL freshly ground pepper

Mix and rub on the chicken before grilling
Again, best eating when carving so have everything ready and EAT!</description>

I was thinking to increase the moistness you might want to try a short brine. It&#039;s pretty amazing how juicy brined meat turns out. The leftovers are even better.
