Louie: I am so glad you liked it! I bet those leftovers sitting in the fridge all night long would make an excellent breakfast. Hope you're doing well!

I made this last night...my only regret is that I didn't double the recipe. Great hot with ice cream, and potentially even better the next day after sitting in the fridge all night long. I'm not sure I'll ever make a apple crisp again.

Being I did not get to taste the above crisp, I'd be MORE than happy to sample the traditional crisp when you get around to it... I mean, if I have to of course.

Amy: You're right---they were crunchy. I've been on a pistachio kick since I made the version of your ice cream cake!

Rachel: Twist my arm ... I will certainly post a crisp recipe soon using the traditional topping. If you need the recipe sooner, let me know and I'll email it to you.

Katy: Oh I am so glad you've seen the error of your ways. Welcome to the fold.

My Sweet & Saucy: Thank you!

grace: Our reactions were quite similar, actually. Mine also involved sighing, copious a la moding and multiple servings. I miss those farms in Virginia ...

sometimes i see foods that look so delicious, i just involuntarily sigh. this is one of those times. plop a huge scoop of vanilla ice cream on my serving(s) and i'm done. :)
meanwhile, hooray for virginia!

Mmmm! I'm also wild about crisps, and like you, usually do the kind that have oats in the topping...but that looks just amazing! I love the bright specks of green pistachios studded throughout the buttery lid. Bet they added nice crunch. Yum, yum!
