I Got Nothin’

July 24 2008 by Kristin at The Kitchen Sink in Recipe,Sandwich » 0 comments

Well, it finally happened. The legal rules have found their way into every single nook and cranny in my brain. If you can believe it, there is no room for daydreamed menus, to-do-list recipes or mental grocery lists. These things typically take up quite a bit of space in my head. But, sadly, the bar exam is occupying that precious real estate now. As such, I declare this day, July 25, 2008, to be Food Porn Friday. It shall feature gratuitous close-ups of my favorite BLT, complete with a creamy pesto spread. Enjoy!

(Click “more” for the photos & recipe.)

Pesto BLTs

1/4 cup pesto
1 tablespoon Greek yogurt
8 slices of your favorite bread
8 slices of ripe tomato, sprinkled with salt and pepper
4 to 8 romaine leaves
12 slices cooked center-cut bacon

Combine the pesto and yogurt. Slather the pesto spread on four slices of the bread. Top each slice of pesto-ed bread with 1 or 2 romaine leaves, 2 tomato slices and 3 slices of bacon. Top each slice with one of the remaining slices of bread.

I so should not have looked at the photos before having breakfast. Why do I torture myself?

First off: Thanks for the recipe. I can’t wait to try it (and it will be this weekend)!

Second: Those pictures are amazing. Not just in the “damn that food looks really appetizing” kind of way, but photographically speaking, they’re very technically “sound”.

Amy: Throw an egg on here and this is totally breakfast. Even without the egg …

Kai: Whoops! I’ve known other vegetarians to be similarly swayed by bacon.

Olga: Oh, I hope it didn’t ruin your Friday! But, thanks.

Amanda: Thank you. Almost there, almost there …

    js: Why thank ya!

Patrick: I hope you do give it a try. And thanks so much for your note about the photos.

This sandwich was every bit as delicious as it looks… the only thing it’s missing is a triple decker component! Maybe after you dominate the bar, I’ll show you my tricks when it comes to the BLT or maybe we’ll just enjoy yours… Again.

My brother’s going through the bar right now, same issue, where all he talks about is law. My Dad went through the stage too, mom says that it only lasts for two or three years.

Michael: Oh, a family of lawyers. I feel for you. :)

Becky: Thanks! The pesto is nice addition.
