I made the chocolate base of these just now ((only because I ran out of cream cheese yesterday)) and I added 1/2 teaspoon(because I like my cupcakes relly fluffy) and one egg. Delicious. They taste just like the chocolate cookie of an Oreo! I'm plunging on filling them with raspberry filling, and topping them with raspberry butter cream!

sjuhye: I would not recommend using sweetened cocoa powder. But you will be fine with dark brown sugar and distilled white vinegar.

Hi, can I substitute SWEETENED cocoa powder for unsweetened and DARK BROWN SUGAR for light brown? Will it affect the outcome/taste of the cupcakes?

I am making these as we speak! They look and smell delicious as they bake, and the are MASSIVE - exploding over my muffin cups!! I guess the baking soda and vinegar really took off!! Seriously taking-over-my-oven big!
p.s. so stoked that the cupcake base is vegan! I'm going to play with that!!

Sometimes saying something looks fabulous starts sounds redundant and boring, but seriously, these have been copied into my recipe files and just look awesome.

Zoe: They were fun!

My Sweet & Saucy: It is a good contrast---kind of like black and white cookies, but in a cupcake form.
