Karen: I used all the leftover mushrooms in my portions.  But if that made the soup too mushroom-y for you, you could certainly use them in a quiche or omelet.  Just make sure they&#039;re well drained.

megan: Keep in mind that two cups of the water is actually a mushroom stock of sorts (because it will be used to steep the mushrooms).  But if you wanted to amp up the flavor, you could go with a higher proporition of beef broth (say, 6 cups, rather than 4 cups).  I didn&#039;t find it bland at all, though.</description>
